My Gumbo
This is my favorite Aunts recipe and could seriously win a gumbo contest….
Fry 12 slices of bacon, thin and drain. Mix bacon grease with 10 Tbsp flour. Brown flour and add bacon (I crumble the bacon)
Add:
12 cups water
5 lbs raw, peeled and deveined shrimp (you can use chicken, shrimp, oysters, crawfish, crab, sausage, or anything else you like – BK and I prefer shrimp and crab)
2 chopped bell peppers
5 packages frozen cut okra
10 bay leaves
4 can peeled and diced tomatoes
10 Tsp worchestire sauce
5 Tsp salt
1 Tbsp pepper
2 cans tomato paste
4 shakes tobasco
1 Tsp Celery Seed
2 Tsp Soy sauce
½ tsp Tarragon
½ tsp Thyme
½ tsp rosemary
½ tsp Savory (optional
Cook slowly for three hours add 2lbs crab meat at the end and serve with Rice
This makes an ass load of Gumbo – BK and I eat it and cool the rest and bag it and suck the air out of the zip loc bag and freeze it for later. Be sure if you are freezing it to divide it up between bags in your preferred serving size – once you heat it up after it is frozen it is not good to re-freeze and re-heat again.
Also – you will need the biggest stock pot you own for this….. just an FYI!

WOW that sounds yummy… I may be waiting on this recipe for a while since it includes “bacon”. But seriouly come the holidays and I need to feed a lot of people while looking like super woman I WILL make it I swear!
